Lessons In The Dram

Balvenie is the only Scottish distillery that still grows its own barley, uses traditional floor maltings, and stations a coppersmith and coppers on-site to keep their pots and barrels in tip-top condition. Talk about dedication!

Like the old soul they are, scotch whiskies are commonly aged in recycled bourbon or Tennessee barrels and finished in casks previously used for wine like sherry or port.

Description

A romantic with all its sweetness and delicate complexities in a single dram.

This distinctive character of the Balvenie DoubleWood comes from being aged in two different types of oak wood. It spends 12 years maturing in traditional American oak ex-bourbon barrels, giving the whisky its supple sweetness, and nine years in Spanish oak ex-oloroso sherry casks, adding depth.

The entire process culminates when the whiskies are transferred into tuns, or large oak vessels, for about four months to marry the flavours to perfection. This iconic whisky is one to love!

Tasting Notes

Sight
Light mahogany
Nose
Grist-y with a soft mix of nuts and spices. Coupled with a sweet fragrance of honeyed sultanas and grapes.
Palate
A well-rounded eclectic body. Starts sweet with distinct bourbon characteristics of mild spices such as nutmeg and cinnamon, hints of vanilla, and a peaty undertone. Develops to dried fruits and nuts before rounding back to those bourbon notes. A wholesome experience in one swirl.
Finish
Leaves a spicy yet sweet aftertaste that’s a little dry.

Brings forth the rum-like scent of cooked fruit, sherry, and sweet toffee.
Palate
A walk through the forest with the rich taste of liqueur cherries dipped in dark chocolate, an abundance of sherried fruits, and some ripened dark berries from the bush.
Finish
A splendid and balanced ending with thick dark molasses and toffee notes, a chewy woodiness, and the soft tang of citrusy green fruits.

Lessons In The Dram

Did you know that the cask matters? Each type produces a different set of flavours and complexities. It practically defines the whisky’s tasting profile. 

For example, the American bourbon offers creamy vanilla and caramel-like sweetness and turns the whisky gold. The oloroso sherry forms a dark nutty profile, while Pedro Ximénez adds sweetness, much like syrup. When distilleries use a mix and match, they give the whisky a deep satisfying depth.  

Description

A classic scotch from one of the finest distilleries in the Highlands. This Tomatin is like a granny who still has it. She is sweet and likes to bake despite being aged in ex-bourbon casks for more than a decade. She then spent six to nine months in oloroso sherry casks to gather some of that rich currants and nuts before being bottled for distribution.

Nose
Starts with a slather of buttery notes before giving way to the tempting aromas of raisins and almonds.
Palate
Invites a rich oaky vanilla flavour that’s counterbalanced with fresh mint, garnished with ginger and dried orange peels for that little bit of zest.
Finish
A warm cottage finish made of currant buns. There’s a light spread of raspberry jam and some yummy barley.
