Lessons in the Dram

Whisky is colourless before it is barrelled or matured in casks. Colourless whisky is called new make. It slowly gets its colour from the wood of the casks that it is aged in. In some countries, distilleries are permitted to add caramel food colouring to get that lovely sherry colour. Well, as some say, a good first impression is everything. 

Description

Can’t get more cereal than 100% malted barley. That’s exactly what this Aberfeldy is made of. It is the cleanest of The Last Great Malts series and spends twelve years grooming itself in American oak barrels. Sometimes ex-bourbon and sometimes ex-sherry. On some days, it soaks itself in some freshwater from the Pitilie Burn—a water source next to the Aberfeldy distillery itself. It’s a pampered whisky, and one to pamper yourself with.

Tasting Notes

Sight
Honeycomb
Nose
Creamy with sherried fruits, prune, custard, and espresso bean. There is a hint of smoky tendrils creeping in from under the nose.
Palate
Smooth and clean, sweet and malty. Gentle on the peat and mellow on the oak. An easy sip of vanilla and peaches in cream.
Finish
Wraps up with a nice kick of ginger, nutty nougat, and shreds of grapefruit rinds.

A quick lesson on whisky and tax:

It was the Scottish Parliament that first implemented an Excise Tax on distilled spirits in 1644. Back then, whisky businesses had to pay 13 pence (RM 0.74) for every one-third of a gallon of whisky. That’s not too bad… or is it?

Description

An ancient dram recreated for your enjoyment. As the story goes, the original 1904 Stronachie whisky was last seen in a 2002 auction. The descendants of Rattray, a Highland Scottish clan, bought the sealed bottle to study its properties.

They drew a small sample from the bottle and did a scientific analysis of the unique, delicate blend of aromatic esters and flavours. Luckily for us, they found a distillery high up in the wilderness that could replicate and resurrect this rare dying spirit. Here we are now, sipping a century-old legend.

Tasting Notes

Sight
Warm gold
Nose
A warm earthy fragrant of heather flowers, malt, fresh biscuits from the oven, and a dollop of honey.
Palate
The mouthfeel is an assortment of Scottish toffee shortbread, malty grains, and flavour-packed spices.
Finish
Seductively long and tender with a lingering sweet malt.

The government is not the only body taxing our beloved whiskies. Angels do too! Every year, they take 2-4% of the whisky that evaporates from the barrels into thin air. In whisky speak, that “supernatural” phenomenon is called Angel’s Share. 

Description

The Benromach 10 Year Old plays by a classic bourbon 80-20 rule. That’s 80% of the whisky matured in first-fill bourbon barrels and 20% aged in sherry casks, creating the perfect outcome. Pareto would be proud.

Tasting Notes

Sight Honey amber
Nose It’s strong on the malt and oak, dry with haylike barley, pine, and fruits. There’s a mild kick from the smell of alcohol. Give it a little time and bits of sweet-smelling maple fudge slowly emerge together with sherried wrinkled prunes.
Palate Generous on the malt and ground ginger. The mouth roams the countryside and finds barley, fresh-cut grass, small amounts of herbal essence and fruits. Seriously, what a great find!
Finish A refined bittersweet aftertaste that’s kind of hoppy after some time, thanks to the ginger and dry sherry notes.
