Mortlach Distillery is one of the oldest distilleries in Scotland, established in 1823 by James Findlater in Dufftown, Speyside.
Mortlach was known for using a unique distillation process called "2.81 distillation," which involved distilling the spirit three times through the wash still and then a fourth time through a smaller spirit still. This process was said to create a robust and complex whisky.
A wonderfully retro-looking bottling of Mortlach single malt from Gordon & MacPhail's Distillery Labels series.
This expression was matured in 1st and Refill Sherry casks for 15 years before being handsomely bottled in 2022.

Teaninich is known for its unique distillation process. It uses a combination of traditional pot stills and a modernized type of column still known as a "mash filter," which is quite uncommon in Scottish whisky production.
Despite not having a wide range of single malt releases, Teaninich plays a significant role in contributing to popular blended whiskies from Diageo, such as Johnnie Walker and Bell's.
This 11 year old single malt was distilled at Teaninich back in April 2010. The whisky was matured in a single American Oak Hogshead cask for 11 years, before the fab gang at Old Goonsy's Malt decided it was time to crack it open and bottle it up in March 2022! A total of 285 bottles were drawn from the cask and the whisky bottled without any added colour or chill-filtration.

One of the distinctive features of Benrinnes is its triple distillation process. Unlike most Scottish distilleries, which use either double or single distillation, Benrinnes undergoes a third distillation, which can result in a different flavor profile.
The distillery uses traditional worm tubs as part of its condensation process. These worm tubs are made of coiled copper tubes immersed in cold water, which helps to condense the alcohol vapors back into liquid form.
Beautiful Benrinnes single malt, distilled in June 2009, after which it spent 12 years maturing in a single American oak hogshead until the folks at Auld Goonsy's Malt decided it was ready for bottling! The cask was opened in November 2021, with a total outturn of 283 bottles at a cask strength of 55.2% ABV.
